  • 100g minced turkey
  • 1 small onion
  • 1 garlic clove
  • ½ can chopped tomatoes
  • Handful spinach
  • 1 large red pepper
  • 50g halloumi
  • Olive oil
  • Salt & Pepper

Directions

  1. Pour the olive oil into a frying pan and cook the mince for 2 minutes
  2. Add in the finely diced onion and cook for a further 2 minutes
  3. Add In the garlic, chopped tomatoes and spinach and cook for a final 2-3 minutes
  4. Mix in the halloumi, season well and stuff inside a large red pepper
  5. Pop into a preheated oven and roast for 15-20 minutes
  6. Enjoy!
