Ingredients (Serves 1)

  • 100g tofu
  • 2 spring onions (sliced)
  • 1 bag stir fry mixed veg
  • 1 carrot (grated)
  • 1 garlic clove (finely diced)
  • 1 red chilli (finely sliced)
  • 1 thumb fresh ginger (finely diced)
  • 1tbsp soy sauce
  • Olive oil
  • Salt & Pepper

Directions

  1. Saute the tofu in olive oil for 2-3 minutes.
  2. Add in the garlic, chilli and ginger and continue to saute for a further 2 minutes.
  3. Throw in the spring onions, vegetables and soy sauce and cook for a final 2-3 minutes.
  4. Serve on a bed of grated carrot
  5. Season and Enjoy!
