Ingredients (Serves 2)
- 6 medium eggs (beaten)
- 50g chorizo (sliced)
- 50g mature cheddar cheese (cubed)
- 10ml olive oil
- 1 red pepper (sliced)
- 1 onion (diced)
- 100g baby spinach
- 3 cloves garlic (finely diced)
- Balsamic vinegar
- Salt & Pepper

Directions
- Heat olive oil in a pan over medium heat
- Add in the diced onion and chorizo and saute for 3-4 minutes
- Splash over the balsamic vinegar and cook for a further minute
- Chuck in the pepper and cook for a further 2 minutes
- Add the garlic, spinach and a little more olive oil and cook for a further few minutes until the spinach wilts
- Meanwhile beat the eggs in a separate bowl and season well with salt and pepper
- Pre heat the grill
- Even out the mixture in the frying pan and sprinkle over the cheddar
- Pour over the eggs and cook for 3-4 minutes
- Transfer the omelette to the grill and cook for a final 3-4 minutes until the top becomes golden.
