- 200g smoked mackerel fillets
- 3 medium eggs
- 100g mixed salad greens
- 10ml Extra Virgin Olive oil

Directions
- Hard boil the eggs in a pan of boiling water for around 8 minutes (soft yolk)
- Arrange the mixed salad greens into the centre of your plates
- Place the ready to eat smoked salmon over the salad
- Peel the hardboiled eggs, half and add to salad
- Drizzle with olive oil and grind some cracked black pepper
