Ingredients (Serves 6)

  • 700g pack beef braising steak strips
  • 500ml bottle beer
  • 2 bell peppers (cut into cubes)
  • 2 medium onions (diced)
  • 200ml sour cream
  • 3 tins chopped tomatoes
  • 1 can sliced carrots
  • 3 medium sized sweet potatoes (cut into cubes)
  • 2tbsp olive oil
  • 3 garlic cloves (finely diced)
  • 2tbsp cider vinegar
  • 1tsp ground cinnamon
  • 1tsp smoked paprika
  • 1tsp ground cumin
  • 1tsp oregano
  • 1tsp thyme
  • 1tsp cayenne pepper
  • Salt & Pepper

Directions

  1. Diced and cut up all of the vegetables, garlic and sweet potatoes
  2. Add all of the ingredients (except the sour cream) to a slow cooker
  3. Stir well and set to slow cook on low temperature for 6 hours
  4. Serve with a dollop of sour cream topped with fresh coriander!
