Ingredients (Serves 4)
- 2x170g cans of skinless & boneless wild Alaskan salmon
- 4 eggs
- 800g new potatoes, cut into cubes
- 1 onion, diced
- 300g green beans
- 4 tbsp extra virgin olive oil
- 2 tbsp real butter
- 1tbsp fresh parsley
- Salt & Pepper

Directions
- Boil the small potatoes in salted water for 5-10 minutes
- heat the butter in a large frying pan and add in the onion and potato cubes and fry for around 10 minutes
- Meanwhile, steam or boil the green beans for around 5 minutes, drizzle a little of the oil over them.
- Stir the salmon and parsley into the potato mix, then make four spaces in the pan
- Crack into the four spaces the eggs and cook for a further 5 minutes or so.
- Drizzle the olive oil over the potato mix, season and serve with the green beans.
