  • 100g spinach (sliced)
  • 10ml olive oil
  • 2tbsp Sour cream
  • 40g butter
  • 2 cloves garlic

Directions

  1. Prepare the eggs by beating in a bowl and seasoning well with salt and pepper
  2. Slice up your spinach.
  3. Heat ¾ of the butter in a frying pan over medium heat and add the spinach in. Drizzle over the olive oil
  4. Sautee for 2 minutes or until the spinach wilts
  5. Add in the diced garlic and sautee for another minute
  6. Mix in the sour cream and cook for a final 1-2 minutes
  7. Place the creamed spinach onto plates
  8. Heat the frying pan to a high heat with the remainder of the butter, pour in the beaten eggs and scramble in the pan for 2-3 minutes (keep the eggs moving with a wooden spoon).
  9. Enjoy!
