- 100g spinach (sliced)

Directions
- Prepare the eggs by beating in a bowl and seasoning well with salt and pepper
- Slice up your spinach.
- Heat ¾ of the butter in a frying pan over medium heat and add the spinach in. Drizzle over the olive oil
- Sautee for 2 minutes or until the spinach wilts
- Add in the diced garlic and sautee for another minute
- Mix in the sour cream and cook for a final 1-2 minutes
- Place the creamed spinach onto plates
- Heat the frying pan to a high heat with the remainder of the butter, pour in the beaten eggs and scramble in the pan for 2-3 minutes (keep the eggs moving with a wooden spoon).
