Ingredients (Serves 2)
- 300g chicken breast (cut into strips)
- 2 red chilli’s
- 2 cloves garlic
- 2tsp honey
- 2dsp peanut butter
- 1dsp soy sauce
- 1tsp Coconut Oil
- 15g salted peanuts
- Salt and pepper
For the stir fried vegetables
- 1 clove garlic
- 1 dsp soy sauce
- 400g Stir Fried vegetable mix
- 10ml sesame oil
- Thumb ginger

- Salt and pepper
For the stir fried vegetables

- 400g Stir Fried vegetable mix
- 10ml sesame oil

Directions
- Cook the chicken in a frying pan for 3 minutes in the coconut oil.
- Add in the diced fresh chilli and cook for a further 2 minutes.
- Add in the remainder of the ingredients (except the peanuts) and cook until chicken is cooked through.
- Meanwhile, mix in a bowl half the soy sauce, sesame oil, ginger, 1 clove garlic and seasoning
- Cook the mixed vegetables in a wok or frying pan for 2-3 minutes
- Pour over the sauce and cook for a final 2 minutes
- Arrange onto plates and scatter over the peanuts
- Enjoy!
