Ingredients (Serves 2)

  • 180g sweet potato (peeled and cubed)
  • 200g steamed salmon fillets
  • 1 small red onion (finely diced)
  • 2 medium red chilli’s (finely diced)
  • Handful fresh chives (finely diced)
  • 40g walnuts (crushed)
  • 1 small broccoli head
  • 100g kale
  • 1tsp extra virgin olive oil
  • Salt & Pepper

Directions

  1. Peel and cube the sweet potato then boil until soft
  2. Dice up the chilli, red onion and chives and pop into a large mixing bowl
  3. Crush your walnuts then add to the bowl
  4. Prepare the broccoli and kale into a steamer ready to go
  5. Unpack the salmon fillets and flake with a fork into the bowl of ingredients
  6. Once the potato is soft, drain and add to your fishcake mixture. Mix it up with a fork, season then arrange into four patties
  7. Heat a frying pan at medium temperature with the olive oil and place in the patties, cooking for 3-4 minutes on each side
  8. Meanwhile set the broccoli and kale to steam for 5-6 minutes, timed to be ready at the same time as the fishcakes
  9. Serve and enjoy!
