Ingredients (Serves 2)
- 180g sweet potato (peeled and cubed)
- 200g steamed salmon fillets
- 1 small red onion (finely diced)
- 2 medium red chilli’s (finely diced)
- Handful fresh chives (finely diced)
- 40g walnuts (crushed)
- 1 small broccoli head
- 100g kale
- 1tsp extra virgin olive oil
- Salt & Pepper

- 1tsp extra virgin olive oil

Directions
- Peel and cube the sweet potato then boil until soft
- Dice up the chilli, red onion and chives and pop into a large mixing bowl
- Crush your walnuts then add to the bowl
- Prepare the broccoli and kale into a steamer ready to go
- Unpack the salmon fillets and flake with a fork into the bowl of ingredients
- Once the potato is soft, drain and add to your fishcake mixture. Mix it up with a fork, season then arrange into four patties
- Heat a frying pan at medium temperature with the olive oil and place in the patties, cooking for 3-4 minutes on each side
- Meanwhile set the broccoli and kale to steam for 5-6 minutes, timed to be ready at the same time as the fishcakes
- Serve and enjoy!
