Ingredients (Serves 2)

  • 2x 120g chicken breast (with skin)
  • 20g Coconut oil
  • 10ml extra virgin olive oil
  • Small cauliflower head
  • Small broccoli head
  • 1tbsp Dark soy sauce
  • 1tbsp honey
  • Half lemon
  • Salt & Pepper

Directions

  1. mix the honey, soy sauce, lemon juice and seasoning in a bowl
  2. butterfly the chicken breasts then base with the sauce using a brush
  3. prepare the cauliflower and broccoli, place in a steam tower and season
  4. heat a frying pan with the coconut oil and fry the chicken for around 3-4 minutes on each side
  5. steam the vegies for around 4 minutes
  6. place the cooked chicken and vegies onto plates and drizzle with olive oil
  7. Enjoy!
