Ingredients (Serves 2)

  • 200g Smoked Bacon
  • 80g feta cheese (cubed)
  • 1 onion (sliced)
  • 1 red pepper (sliced)
  • 150g frozen peas
  • Splash balsamic vinegar
  • Slice real butter
  • Extra Virgin Olive Oil
  • Salt & pepper

Directions

  1. Heat butter in a frying pan over medium heat and saute the onion for 2-3 minutes
  2. Add in the chopped bacon and cook for a further 3 minutes
  3. Splash over the balsamic, then and add in the sliced red pepper, cooking for a further 2-3 minutes
  4. Chuck in the frozen peas, cooking for a final 3-4 minutes
  5. Serve into bowls, add the cubed feta, olive oil and season to taste
