- 2 medium hardboiled eggs
- 1/2 avocado
- 1/2 bell pepper
- 3 cherry tomatoes (halved)
- 1tsp Extra virgin olive oil
- Lemon juice
- Cracked black pepper

Directions
- Bring a pan of water to the boil
- Pop the eggs into the pan and boil for 6-8 minutes
- Meanwhile, mash the avocado, lemon juice, olive oil and black pepper together
- Deshell the eggs and half
- Arrange the salad on a plate or in a bowl
- Enjoy!
