Ingredients (Serves 2)

  • 120g wholewheat pasta
  • 2x medium eggs
  • 50g low fat greek yogurt
  • 1 medium onion
  • 4 rashes smoked bacon
  • 40g mozzarella
  • 2 cloves garlic
  • 2x tsp butter
  • Salt & pepper

Directions

  1. Set pasta to boil on hob for 10-12minutes
  2. Best eggs in bowl and season
  3. Melt half butter in pan on medium heat and add onion, cook for 2minutes. 
  4. Add bacon and cook for a further 3 minutes 
  5. Add garlic and cook for a further 2 minutes
  6. Once pasta is cooked drain but leave a tiny amount of water in pan. Mix eggs into the pasta and stir until eggs begin to thicken. (May need to return to low heat). 
  7. Place thin cuts of mozzarella into pan with bacon etc and cook for a final minute or two until cheese melts. 
  8. Serve pasta and top with bacon etc mix
