  • 160g smoked salmon
  • 60g feta cheese
  • 100g beetroot
  • 120g cherry tomato
  • ½ red onion (Diced)
  • 15g olive oil
  • ½ lime (juice of)
  • Salt & Pepper

Directions

  1. Dice the red onion and place in a small bowl
  2. Squeeze the lime juice over the onion and leave for 5 mins
  3. Cut up the smoked salmon, feta (cubes), beetroot and tomato and place in a mixing bowl
  4. Add in the red onion and drizzle over the olive oil
  5. Season to taste and serve
