Ingredients (Serves 4)
- 1 red or yellow bell pepper
- 1 red onion
- 100g sliced green olives
- 400g chicken breast (cut into 1cm cubes)
- 100g of mozzarella or feta cheese
- 6 good handfuls of baby leaf spinach
- 2 cloves of garlic (thinly sliced)
- 150g cherry tomatoes halved
- 150g good quality Chorizo (sliced)
- 250g small potatoes cubed
- Olive oil or coconut oil

- 100g of mozzarella or feta cheese
- 6 good handfuls of baby leaf spinach
- 2 cloves of garlic (thinly sliced)
- 150g cherry tomatoes halved
- 150g good quality Chorizo (sliced)
- 250g small potatoes cubed
- Olive oil or coconut oil
Directions
- Boil the small potatoes in salted water for 5-10minutes, once cooked slice into ½ cm slices and set to the side.
- Heat the oil in a large frying pan and cook the sliced chorizo for a minute or two.
- Add the chicken and sliced potato and cook for a further 4-5 minutes until chicken is cooked through.
- Add the garlic, diced onion and pepper, cook for two minutes, add the cherry tomatoes and cook for a further minute or two.
- Chuck in the spinach and heat until it wilts, add the mozzarella or feta to the pan and gently heat until the cheese begins to soften.
- Sprinkle over the sliced olives and add a dash of salt & pepper to serve.
