  • 2x chicken breast (120g)
  • 50g cream cheese
  • 50g pesto
  • 50g mushrooms
  • 100g spinach
  • 1 onion
  • 10g butter

Directions

  1. Pre heat the oven to 190 degrees Celsius
  2. Butterfly the chicken breasts and stuff with the cream cheese and pesto. Fold over and place in a small baking pot, popping into the oven. Cook for 20-25 minutes.
  3. Heat a frying pan with the butter and saute the onion for 3 minutes
  4. Add in the mushrooms and saute for a further 2 minutes
  5. Finally add in the spinach and continue to saute until the spinach becomes wilted
  6. Season the sauted veg and serve with the stuffed chicken fillet
