- 2x chicken breast (120g)
- 50g cream cheese
- 50g pesto
- 50g mushrooms
- 100g spinach
- 1 onion
- 10g butter
- Salt & Pepper

Directions
- Pre heat the oven to 190 degrees Celsius
- Butterfly the chicken breasts and stuff with the cream cheese and pesto. Fold over and place in a small baking pot, popping into the oven. Cook for 20-25 minutes.
- Heat a frying pan with the butter and saute the onion for 3 minutes
- Add in the mushrooms and saute for a further 2 minutes
- Finally add in the spinach and continue to saute until the spinach becomes wilted
- Season the sauted veg and serve with the stuffed chicken fillet
