Ingredients (Serves 2)

  • 2 thin rashes bacon
  • 5 medium eggs
  • 1/2 red onion
  • 1 bell pepper
  • 15 olives
  • 20g cheese
  • 10ml olive oil
  • 2 cloves garlic
  • Splash balsamic vinegar
  • Salt and pepper

Directions

  1. Pre heat grill
  2. Put onion in and sauté for 1-2 mins
  3. Add bacon and sauté further 2 mins
  4. Add garlic and pepper and sauté further 2-3mins
  5. Add egg and cook 2mins
  6. Add cheese and olives to top and cook further 2-3mins
  7. Finish off in grill until lightly brown for a final minute or two
