Ingredients (Serves 2)

  • 1 Large egg
  • 50g Porridge Oats
  • 15g chia seeds
  • 100ml whole milk
  • 1 scoop vanilla whey protein
  • 5g real Butter
  • 1tsp cinnamon
  • 1/4tsp baking powder
  • 150g Greek Yogurt
  • 70g fresh raspberries
  • 20g pumpkin seeds
  • 20g toasted flaked almonds

Directions

  1. Pop the oats into a blender and blitz for a few seconds
  2. Add in the egg, milk, whey protein, cinnamon, baking powder and chia seeds and blitz until a smooth batter
  3. Heat the butter in a frying pan on high heat
  4. Once the pan is hot pour in the batter mixture evenly across the pan
  5. Cook for 2-3 mins then flip and cook for a final 60-90s
  6. Cut the pancake into quarters and stack 1/2 on each plate
  7. Serve with the Greek yogurt, raspberries, flaked almonds and pumpkin seeds
