  • 2 medium hardboiled eggs
  • 1/2 avocado
  • 1/2 bell pepper
  • 3 cherry tomatoes (halved)
  • 1tsp Extra virgin olive oil
  • Lemon juice
  • Cracked black pepper

Directions

  1. Bring a pan of water to the boil

  4. Deshell the eggs and half
  5. Arrange the salad on a plate or in a bowl
  6. Enjoy!
