Ingredients (Serves 2)
- 250g salmon fillets (cut into cubes)
- 1 green bell pepper (cut into squares)
- 1 red bell pepper (cut into squares)
- 1 small courgette (thickly sliced)
- 60g halloumi cheese (cut into thick slices)
- 8 cherry tomatoes (halved)
- 2tsp extra virgin olive oil
- 2 cloves garlic (finely diced)
- 2tsp fresh rosemary (finely chopped)
- juice of 1/2 lemon
- Salt & Pepper

Directions
- Pre heat the grill to medium heat
- Soak your skewers in cold water for a couple of minutes
- Mix the olive oil, garlic, rosemary, salt, pepper and lemon juice in a bowl
- Coat the salmon in the sauce
- Arrange the vegetables, salmon pieces and halloumi cubes onto the skewers evenly
- Place the skewers into the grill (or BBQ) and cook for around 8-10 minutes turning regularly.
