Ingredients (Serves 2)

  • 250g salmon fillets (cut into cubes)
  • 1 green bell pepper (cut into squares)
  • 1 red bell pepper (cut into squares)
  • 1 small courgette (thickly sliced)
  • 60g halloumi cheese (cut into thick slices)
  • 8 cherry tomatoes (halved)
  • 2tsp extra virgin olive oil
  • 2 cloves garlic (finely diced)
  • 2tsp fresh rosemary (finely chopped)
  • juice of 1/2 lemon
  • Salt & Pepper

Directions

  1. Pre heat the grill to medium heat
  2. Soak your skewers in cold water for a couple of minutes
  3. Mix the olive oil, garlic, rosemary, salt, pepper and lemon juice in a bowl
  4. Coat the salmon in the sauce
  5. Arrange the vegetables, salmon pieces and halloumi cubes onto the skewers evenly
  6. Place the skewers into the grill (or BBQ) and cook for around 8-10 minutes turning regularly.
  7. Enjoy!
