  • 2 wholegrain bagels
  • 4 eggs medium (poached)
  • 80g smoked salmon (4 slices)
  • 2dsp mayonnaise
  • juice 1/2 lemon
  • White Pepper
  • Pinch Cayenne Pepper
  • Salt

Directions

  1. Crack the eggs into a pan of boiling water and poach for around 3 minutes
  2. Mix the mayonnaise, lemon juice, white pepper and cayenne pepper in a bowl
  3. Meanwhile, heat the bagel in a toaster
  4. Pop the toasted bagel on a plate, top with smoked salmon and the poached eggs
  5. Pour over the lazy hollandaise sauce and season
  6. Enjoy!
