  • 1 wholegrain bagel
  • 2 eggs poached
  • 2 rashes smoked bacon
  • 1dsp mayonnaise
  • squeeze lemon juice
  • Cracked black pepper
  • Salt

Directions

  1. Heat the butter in a frying pan over medium heat
  2. Add the slices of bacon and fry for 5 minutes turning
  3. Mix the mayonnaise, lemon juice and cracked black pepper in a bowl
  4. Crack the eggs into a pan of boiling water and poach for around 3 minutes
  5. Meanwhile, heat the bagel in a toaster
  6. Pop the toasted bagel on a plate, top with the bacon and the poached eggs
  7. Pour over the lazy hollandaise sauce and season
