Ingredients (Serves 4)

  • 2x170g cans of skinless & boneless wild Alaskan salmon
  • 4 eggs
  • 800g new potatoes, cut into cubes
  • 1 onion, diced
  • 300g green beans
  • 4 tbsp extra virgin olive oil
  • 2 tbsp real butter
  • 1tbsp fresh parsley
  • Salt & Pepper

Directions

  1. Boil the small potatoes in salted water for 5-10 minutes
  2. heat the butter in a large frying pan and add in the onion and potato cubes and fry for around 10 minutes
  3. Meanwhile, steam or boil the green beans for around 5 minutes, drizzle a little of the oil over them.
  4. Stir the salmon and parsley into the potato mix, then make four spaces in the pan
  5. Crack into the four spaces the eggs and cook for a further 5 minutes or so.
  6. Drizzle the olive oil over the potato mix, season and serve with the green beans.
