Ingredients (Serves 2)
- 2x 150g cod fillets
- 1 red pepper
- 1 yellow pepper
- 1 large courgette
- 10ml olive oil
- 100g vintage cheddar
- 100ml whole milk
- 1tsp English mustard
- 2tsp mixed herbs
- 10g butter
- Black pepper
- Salt

Directions
- Preheat oven to 200’c
- Slice up the vegetables, place on a baking tray, drizzle with olive oil and season. Place in the oven and bake for 15 minutes
- Meanwhile, prepare the cheese sauce by melting butter in a pan. Pour in the milk, stirring continuously for a minute or two.
- Slowly add in the grated cheese stirring constantly. Next add the mustard, herbs and seasoning too.
- Place the fillets in a small baking dish, pour over the cheese sauce and pop in the oven for around 15 minutes
