Ingredients (Serves 2)

  • 2x 150g cod fillets
  • 1 red pepper
  • 1 yellow pepper
  • 1 large courgette
  • 10ml olive oil
  • 100g vintage cheddar
  • 100ml whole milk
  • 1tsp English mustard
  • 2tsp mixed herbs
  • 10g butter
  • Black pepper
  • Salt

Directions

  1. Preheat oven to 200’c
  2. Slice up the vegetables, place on a baking tray, drizzle with olive oil and season. Place in the oven and bake for 15 minutes
  3. Meanwhile, prepare the cheese sauce by melting butter in a pan. Pour in the milk, stirring continuously for a minute or two.
  4. Slowly add in the grated cheese stirring constantly. Next add the mustard, herbs and seasoning too.
  5. Place the fillets in a small baking dish, pour over the cheese sauce and pop in the oven for around 15 minutes
  6. Enjoy!
