Ingredients (Serves 2)

  • 2x 120g chicken breast
  • 3tbsp full fat Greek yogurt
  • 2tsp tandoori paste
  • 1 red pepper
  • 1 yellow pepper
  • 1 large courgette
  • 100g sour cream
  • Fresh chives
  • Salt & Pepper
  • 10ml Olive oil
  • Skewers

Directions

  1. Cut the chicken breasts into pieces and place in a plastic bag with the Greek yogurt, olive oil and tandoori paste and marinade for at least 30 minutes in the fridge
  2. Pre-heat a grill.
  3. Cut up the peppers and courgette into squares
  4. Assemble the skewers by sliding the marinated chicken and vegetables onto them
  5. Season and grill for 10 minutes or until cooked through, turning regularly
  6. Meanwhile, prepare the dip by chopping up fresh chives and mixing into the sour cream
  7. Enjoy!
