Ingredients (Serves 1)
- 100g tofu
- 2 spring onions (sliced)
- 1 bag stir fry mixed veg
- 1 carrot (grated)
- 1 garlic clove (finely diced)
- 1 red chilli (finely sliced)
- 1 thumb fresh ginger (finely diced)
- 1tbsp soy sauce
- Olive oil
- Salt & Pepper

Directions
- Saute the tofu in olive oil for 2-3 minutes.
- Add in the garlic, chilli and ginger and continue to saute for a further 2 minutes.
- Throw in the spring onions, vegetables and soy sauce and cook for a final 2-3 minutes.
- Serve on a bed of grated carrot
- Season and Enjoy!
