Ingredients (Serves 4)

  • 2x200g bags brussel sprouts
  • 5 rashers smoked bacon
  • 3 cloves garlic
  • 200g shallots
  • 30g toasted flaked almonds
  • Balsamic vinegar
  • 20g butter
  • 20ml Extra virgin olive oil
  • Salt & Pepper

Method

  1. Prep your sprouts and boil for 7-10 minutes in salted water with added olive oil.
  2. Meanwhile, fry off your shallots in butter until softening, splash over some balsamic and continue to fry for another few minutes.
  3. Add in the sliced bacon and fry until cooked.
  4. Add in some finely diced garlic and fry for another minute.
  5. Mix in the sprouts, drizzle with olive oil, season, and continue to fry together, mixing well for a final minute or two.
  6. Dust over with the toasted almond flakes to serve.
