Ingredients (Serves 4)
- 2x200g bags brussel sprouts
- 5 rashers smoked bacon
- 3 cloves garlic
- 200g shallots
- 30g toasted flaked almonds
- Balsamic vinegar
- 20g butter
- 20ml Extra virgin olive oil
- Salt & Pepper

Method
- Prep your sprouts and boil for 7-10 minutes in salted water with added olive oil.
- Meanwhile, fry off your shallots in butter until softening, splash over some balsamic and continue to fry for another few minutes.
- Add in the sliced bacon and fry until cooked.
- Add in some finely diced garlic and fry for another minute.
- Mix in the sprouts, drizzle with olive oil, season, and continue to fry together, mixing well for a final minute or two.
- Dust over with the toasted almond flakes to serve.
