Method

  1. Fill a pan with water, raise to a boil and simmer. Drop the eggs in and hard boil for 7 minutes
  2. Slice up the chorizo and fry in a pan with a little olive oil for 3-4 minutes. Adding in the garlic for the final minute.
  3. Meanwhile, prepare the avocado by cutting in half, de seed and remove the flesh into a bowl
  4. Crush the avocado with a folk, add the olive oil, cracked pepper, salt and lemon juice
  5. Deshell the eggs, cut in half and place in a bowl alongside the avocado mix
  6. Add the chorizo and garlic to the avocado mix.
  7. Enjoy
