Ingredients (Serves 2)

  • 6 medium eggs (beaten)
  • 50g chorizo (sliced)
  • 50g mature cheddar cheese (cubed)
  • 10ml olive oil
  • 1 red pepper (sliced)
  • 1 onion (diced)
  • 100g baby spinach
  • 3 cloves garlic (finely diced)
  • Balsamic vinegar
  • Salt & Pepper

Directions

  1. Heat olive oil in a pan over medium heat
  2. Add in the diced onion and chorizo and saute for 3-4 minutes
  3. Splash over the balsamic vinegar and cook for a further minute
  4. Chuck in the pepper and cook for a further 2 minutes
  5. Add the garlic, spinach and a little more olive oil and cook for a further few minutes until the spinach wilts
  6. Meanwhile beat the eggs in a separate bowl and season well with salt and pepper
  7. Pre heat the grill
  8. Even out the mixture in the frying pan and sprinkle over the cheddar
  9. Pour over the eggs and cook for 3-4 minutes
  10. Transfer the omelette to the grill and cook for a final 3-4 minutes until the top becomes golden.
  11. Enjoy!
