- 160g smoked salmon
- 60g feta cheese
- 100g beetroot
- 120g cherry tomato
- ½ red onion (Diced)
- 15g olive oil
- ½ lime (juice of)
- Salt & Pepper

- 160g smoked salmon
- 60g feta cheese

Directions
- Dice the red onion and place in a small bowl
- Squeeze the lime juice over the onion and leave for 5 mins
- Cut up the smoked salmon, feta (cubes), beetroot and tomato and place in a mixing bowl
- Add in the red onion and drizzle over the olive oil
- Season to taste and serve
