Ingredients (Makes around 15)
- 400g Chicken breast (Cut into chunks)
- 150g smooth peanut butter
- 150ml coconut milk
- 2 red chilli’s
- 1 large thumb Ginger
- 2 cloves garlic
- 1 dsp honey
- 2 tsp mild curry powder
- 1 tsp cumin
- 1tsp turmeric
- 3dsp Soy sauce
- 1 lime (Juice of)

Directions
- Prepare the marinade by throwing all of the ingredients (except the chicken) into a food processor.
- Blitz until smooth
- Cut up the chicken breasts into good sized chunks and place in a large plastic bag or container then pour over the marinade
- Leave to marinade for at least 3 hours or ideally overnight
- Slide the marinated chicken onto the skewers and arrange onto a large baking tray coated in coconut oil
- Pour any remaining marinade over the prepared skewers
- Grill for 10 minutes or so or until cooked through (turning occasionally)
- Serve and enjoy!
