Teryaki Salmon with Steamed Veg
Ingredients (Serves 2)
- 240g salmon fillet
- 2 thumbs Ginger (finely diced)
- 1-2 cloves garlic (finely diced)
- 1 red chilli (finely diced)
- 3dsp coconut milk
- 10g coconut oil
- 3tsp honey
- 10ml rice wine vinegar
- 10ml mirin sauce or sesame oil
- 10ml dark soy sauce
- 1 onion
- 2 cups broccoli
- 200g green beans
- ½ lemon

- 10g coconut oil
- 3tsp honey
- 10ml rice wine vinegar
- 10ml mirin sauce or sesame oil
- 10ml dark soy sauce
- 1 onion
- 2 cups broccoli
- 200g green beans
- ½ lemon
Salt & Pepper
Directions
- Heat coconut oil in a frying pan at medium heat and saute the onion for 3-4 minutes
- Mix the ginger, garlic, rice wine vinegar, soy sauce, honey and mirin sauce (or sesame oil) in a bowl and season with salt and pepper.
- Throw the salmon and chilli into the frying pan, cooking for 3-4 minutes on each side
- Set the green beans and broccoli to steam for 3-4 minutes
- Pour the marinade over the salmon and add the coconut milk, and cook for a further minute or two on each side
- Serve alongside the vegetables with a lemon wedge
