Spinach & Feta Omelette
Ingredients (Serves 1)
- – 3 eggs (beaten)
- 2 handfuls spinach
- ½ red onion sliced
- 5g butter
- 30g feta (cubed)
- 1 clove garlic (finely diced)
- Balsamic vinegar (splash)
- Olive oil
- Salt & pepper

Directions
1. Heat the butter in a frying pan over medium heat and add in the red onion, frying for 3-4 minutes.
2. Splash over the balsamic and fry for a further 1-2 minutes.
3. Add in the spinach, garlic and olive oil and fry until the spinach wilts.
4. Beat the eggs in a separate bowl and season well with salt and pepper to taste.
5. Sprinkle the feta over the mixture, then add in the eggs and cook on medium heat until the base is golden.
6. Use a plate to flip the omelette by sliding the omelette out of the pan onto the plate on the cooked side, then place the pan over the plate and flip the plate over so that the uncooked side is now face down in the pan.
7. Cook for a final 2 minutes or so.
