Ingredients (Serves 2)

  • 6 Eggs
  • 50g Chorizo (sliced)
  • 4 handfuls spinach
  • 1 onion (diced)
  • 3 cloves garlic (finely diced)
  • 40g feta
  • 5g butter
  • 10ml extra virgin olive oil
  • Sat & Pepper

Directions

  1. Heat butter in a frying pan over medium heat, throw in the diced onion and chorizo and saute for 3-4 minutes
  2. Add the garlic, spinach and olive oil and cook until the spinach wilts
  3. Meanwhile, beat the eggs in a bowl and season well with salt and pepper
  4. Pre heat the grill on a high heat
  5. Pour the egg mixture evenly into the frying pan
  6. Cook for roughly 4-5 minutes
  7. Remove from the hob and place under the grill for a final 2-3 minutes or until the top is golden.
  8. Crumble over the feta to serve
