  • 4 rashes of smoked bacon
  • 100g spinach
  • 10 cherry tomatoes (quartered)
  • 40g crumbled feta
  • Extra Virgin Olive oil
  • Salt & pepper to taste

Directions

  1. Grill the rashes of bacon and steam the spinach until cooked (Wilted), draining off all the excess water.
  2. Heat the oven to 190’C and chop the bacon and spinach into small chunks.
  3. Coat 6 cups of a muffin tin with the olive oil using a brush.
  4. Beat the eggs in a large bowl until smooth, season well, then add in the rest of the ingredients.
  5. Divide the mixture into the 6 cups and bake for 15-20 minutes in the oven.
  6. Eat hot or store in the fridge
