- 6 eggs
- 4 rashes of smoked bacon
- 100g spinach
- 10 cherry tomatoes (quartered)
- 40g crumbled feta
- Extra Virgin Olive oil
- Salt & pepper to taste

Directions
- Grill the rashes of bacon and steam the spinach until cooked (Wilted), draining off all the excess water.
- Heat the oven to 190’C and chop the bacon and spinach into small chunks.
- Coat 6 cups of a muffin tin with the olive oil using a brush.
- Beat the eggs in a large bowl until smooth, season well, then add in the rest of the ingredients.
- Divide the mixture into the 6 cups and bake for 15-20 minutes in the oven.
- Eat hot or store in the fridge
