- 60g quinoa
- 120g chicken breast
- ¼ diced red onion
- 60g sliced cucumber
- 50g halved black olives
- 3 cherry tomatos
- Extra virgin Olive oil
- Lemon juice
- Salt and pepper

Directions
- Pop the Quinoa in a pan of boiling salted water, and simmer for 15-20 minutes (check pack)
- Meanwhile, grill the chicken breast for around 3 minutes or so on each side or until cooked through.
- Prepare the salad by slicing up the chicken and combine with the red onion, sliced cucumber, halved black olives and cherry tomatoes
- Season the quinoa with salt and pepper then mix into the salad. Drizzle with extra virgin olive oil and lemon juice to serve.
