  • 60g quinoa
  • 120g chicken breast
  • ¼ diced red onion
  • 60g sliced cucumber
  • 50g halved black olives
  • 3 cherry tomatos
  • Extra virgin Olive oil
  • Lemon juice
  • Salt and pepper

Directions

  1. Pop the Quinoa in a pan of boiling salted water, and simmer for 15-20 minutes (check pack)
  2. Meanwhile, grill the chicken breast for around 3 minutes or so on each side or until cooked through.
  3. Prepare the salad by slicing up the chicken and combine with the red onion, sliced cucumber, halved black olives and cherry tomatoes
  4. Season the quinoa with salt and pepper then mix into the salad. Drizzle with extra virgin olive oil and lemon juice to serve.
