Peri Peri Chicken Mango Salad
Ingredients (Serves 2)
- 2x 120g chicken breast
- Peri Peri sauce (no added sugar)
- 1 mango diced
- Romaine lettuce sliced
- 100g cherry tomato’s
- Avocado, sliced
- ½ red onion (finely diced)
- Extra virgin Olive oil
- Coconut oil or butter for cooking
- Slice lime
- Cracked Pepper

- 1 mango diced
- Romaine lettuce sliced
- 100g cherry tomato’s
- Avocado, sliced

Directions
- Marinate the chicken, cut into strips in the Peri Peri sauce overnight or for a least 3hrs in a fridge.
- Fry the onion in a little butter or coconut oil until it begins to soften then add the chicken, cooking for 6-8 minutes until cooked through. Keep turning the chicken pieces.
- Arrange lettuce onto plates, with the other salad vegies, pour over chicken, add avocado & mango and drizzle with olive oil, lime and season with pepper.
