Ingredients (Serves 1)
- 1 slice of wholegrain seeded bread
- ¼ avocado mashed
- Juice of a lemon wedge
- 3 cherry tomato’s halved
- 4 green olives sliced
- 2 soft boiled egg halved
- 15g feta cheese (Crumbled)
- Cracked black pepper & sea salt

- ¼ avocado mashed
- Juice of a lemon wedge

Directions
- Prepare the avocado by mashing, squeeze over the lemon juice, add the cracked black pepper and mix well.
- Toast the bread and spread over the avocado mix.
- Add the tomato’s, olives, halves of egg and crumbled feta and grind over salt and pepper to taste.
