Ingredients (Serves 4)

  • 200g wholegrain spaghetti
  • Water
  • 1 red onion (Diced)
  • 1 lemongrass chute
  • 400g peeled tiger prawns
  • 2 red chilli’s
  • Fresh basil
  • 2 tbsp anchovies
  • 2tbsp extra virgin olive oil
  • 2 fresh lemons
  • 80g fresh spinach
  • Salt & Pepper

Directions

  1. Add spaghetti to a pan of boiling water and cook for around 8 minutes.
  2. Add some olive oil and diced onion to a frying pan and saute until they begin to soften
  3. Add in the chilli, prawns and lemongrass to the frying pan and cook for around 3-4 minutes
  4. Continue boiling the spaghetti until its aldante.
  5. Meanwhile, add the spinach to the frying pan and saute until the spinach wilts.
  6. Drain the spaghetti and place in a large bowl, adding in the basil and other ingredients.
  7. Add the cooked vegetables and prawns to the mix and stir everything together.
  8. Garnish with lemon wedges and serve with sliced steamed broccoli.
