Ingredients (Serves 4)
- 200g wholegrain spaghetti
- Water
- 1 red onion (Diced)
- 1 lemongrass chute
- 400g peeled tiger prawns
- 2 red chilli’s
- Fresh basil
- 2 tbsp anchovies
- 2tbsp extra virgin olive oil
- 2 fresh lemons
- 80g fresh spinach
- Salt & Pepper

- 200g wholegrain spaghetti

- 1 lemongrass chute
- 400g peeled tiger prawns

- Fresh basil
- 2 tbsp anchovies
- 2tbsp extra virgin olive oil
- 2 fresh lemons
- 80g fresh spinach
- Salt & Pepper
Directions
- Add spaghetti to a pan of boiling water and cook for around 8 minutes.
- Add some olive oil and diced onion to a frying pan and saute until they begin to soften
- Add in the chilli, prawns and lemongrass to the frying pan and cook for around 3-4 minutes
- Continue boiling the spaghetti until its aldante.
- Meanwhile, add the spinach to the frying pan and saute until the spinach wilts.
- Drain the spaghetti and place in a large bowl, adding in the basil and other ingredients.
- Add the cooked vegetables and prawns to the mix and stir everything together.
- Garnish with lemon wedges and serve with sliced steamed broccoli.
