Ingredients (Serves 2)
- 6 eggs
- 1 red onion (diced)
- 50g sliced ham or 50g sliced salami (squares)
- 5g butter
- 2 cloves garlic (finely diced)
- 5ml olive oil
- 8 cherry tomatoes (quartered)
- Cheddar cheese (Grated for topping)
- Salt & pepper
- Green olives (optional)

Directions
- Heat a frying pan with butter over medium heat and add in the diced onion, cooking for around 3-4 minutes until they soften.
- Add in the sliced tomatoes and cook for a further 3 minutes
- Meanwhile beat the eggs in a separate bowl and season well with salt and pepper
- Add the garlic and olive oil to the frying pan and cook for 2 more minutes.
- Sprinkle over diced olives (optional)
- Throw in the ham or salami then pour over the egg mixture evenly distributing it across the whole pan
- Pre heat the grill to a high temperature
- Cook for 4 minutes or so on the hob until the base of the pizza becomes slightly golden (you could check by prying up one side of the pizza gently)
- Transfer the pan to under the grill and cook for around 3 minutes, pull out and sprinkle over the grated cheese then return under the grill for a final minute or two.
