Ingredients (Serves 2)

  • 6 eggs
  • 1 red onion (diced)
  • 50g sliced ham or 50g sliced salami (squares)
  • 5g butter
  • 2 cloves garlic (finely diced)
  • 5ml olive oil
  • 8 cherry tomatoes (quartered)
  • Cheddar cheese (Grated for topping)
  • Salt & pepper
  • Green olives (optional)

Directions

  1. Heat a frying pan with butter over medium heat and add in the diced onion, cooking for around 3-4 minutes until they soften.
  2. Add in the sliced tomatoes and cook for a further 3 minutes
  3. Meanwhile beat the eggs in a separate bowl and season well with salt and pepper
  4. Add the garlic and olive oil to the frying pan and cook for 2 more minutes.
  5. Sprinkle over diced olives (optional)
  6. Throw in the ham or salami then pour over the egg mixture evenly distributing it across the whole pan
  7. Pre heat the grill to a high temperature
  8. Cook for 4 minutes or so on the hob until the base of the pizza becomes slightly golden (you could check by prying up one side of the pizza gently)
  9. Transfer the pan to under the grill and cook for around 3 minutes, pull out and sprinkle over the grated cheese then return under the grill for a final minute or two.
