Garlic Sticky Chicken with Quinoa & Greens
Ingredients (Serves 4)
- 200g quinoa
- 1 red onion, finely diced
- 4 chicken breast fillets
- 5 tbsp honey
- 4 cloves of garlic finely sliced
- 2 tbsp Olive oil
- Salt & pepper to taste
- 2x limes, juice of
- Chopped flat leaf parsley
- Broccoli and/or other green veg

- 200g quinoa

- 5 tbsp honey
- 4 cloves of garlic finely sliced
- 2 tbsp Olive oil
- Salt & pepper to taste
- 2x limes, juice of
- Chopped flat leaf parsley
- Broccoli and/or other green veg
Directions
- Cook the quinoa in salt water and set to the side (check packet).
- Heat a non-stick frying pan with a little olive oil and cook the chicken breasts for 3-4 minutes turning.
- Add in the diced red onion and cook for a further minute or two.
- Meanwhile, mix the remainder of the olive oil, honey, garlic and lime juice together before adding to the frying pan, coating the chicken.
- Serve alongside the quinoa with a lime wedge and steamed greens.
