Garlic Sticky Chicken with Quinoa & Greens

Ingredients (Serves 4)

  • 200g quinoa
  • 1 red onion, finely diced
  • 4 chicken breast fillets
  • 5 tbsp honey
  • 4 cloves of garlic finely sliced
  • 2 tbsp Olive oil
  • Salt & pepper to taste
  • 2x limes, juice of
  • Chopped flat leaf parsley
  • Broccoli and/or other green veg

Directions

  1. Cook the quinoa in salt water and set to the side (check packet).
  2. Heat a non-stick frying pan with a little olive oil and cook the chicken breasts for 3-4 minutes turning.
  3. Add in the diced red onion and cook for a further minute or two.
  4. Meanwhile, mix the remainder of the olive oil, honey, garlic and lime juice together before adding to the frying pan, coating the chicken.
  5. Serve alongside the quinoa with a lime wedge and steamed greens.
