Cinnamon & Blueberry Protein Pancakes
Ingredients (Serves 1)
- 25g whey protein
- 100ml milk
- 1 large egg
- 50g porridge oats
- 1tsp cinnamon
- ¼ tsp baking powder
- 10g butter

Directions
- Add the oats to a blender and blitz until fine
- Add remaining ingredients except the butter and blitz again until you get a batter texture
- Heat a frying pan with the butter to a high heat (make sure pan is hot before adding in mixture)
- Pour the batter into the frying pan evenly spreading it around the pan
- Cook for approx. 60s on each side or until lightly golden
- Move onto a plate and cut the pancake into quarters, stack them up on top of each other
- Serve with blueberries and 100g Greek Yogurt or Skyr yogurt
