Ingredients (Serves 4)

  • 4 large ripe vine tomatoes, cut into wedges
  • 2 cucumbers, sliced
  • 1 red onion, thinly sliced
  • salt and freshly ground black pepper to taste
  • 4 tbsp olive oil
  • Juice of ½ lemon
  • 1 1/2 teaspoons dried oregano
  • (200g) pack feta cheese cut into 1cm cubes
  • 2 handfuls black pitted Greek olives

Directions

  1. Using a shallow salad bowl, combine the tomato’s, cucumber and red onion, and sprinkle with salt to taste.
  2. Leave for a few minutes to enable the salt to draw out the natural juices from the tomato and cucumber.
  3. Squeeze lemon juice over the onion in a separate bowl and leave for a few minutes.
  4. Throw the lemon and onion into the salad.
  5. Drizzle the salad with the olive oil and sprinkle with oregano and pepper to taste.
  6. Sprinkle over the halved olives and cubed feta.
  7. Serve with a glass of red or some homemade crusty bread.
