Ingredients (Serves 4)
- 4 large ripe vine tomatoes, cut into wedges
- 2 cucumbers, sliced
- 1 red onion, thinly sliced
- salt and freshly ground black pepper to taste
- 4 tbsp olive oil
- Juice of ½ lemon
- 1 1/2 teaspoons dried oregano
- (200g) pack feta cheese cut into 1cm cubes
- 2 handfuls black pitted Greek olives

Directions
- Using a shallow salad bowl, combine the tomato’s, cucumber and red onion, and sprinkle with salt to taste.
- Leave for a few minutes to enable the salt to draw out the natural juices from the tomato and cucumber.
- Squeeze lemon juice over the onion in a separate bowl and leave for a few minutes.
- Throw the lemon and onion into the salad.
- Drizzle the salad with the olive oil and sprinkle with oregano and pepper to taste.
- Sprinkle over the halved olives and cubed feta.
- Serve with a glass of red or some homemade crusty bread.
