Ingredients (Serves 1)

  • 1 slice of wholegrain seeded bread
  • ¼ avocado mashed
  • Juice of a lemon wedge
  • 3 cherry tomato’s halved
  • 4 green olives sliced
  • 2 soft boiled egg halved
  • 15g feta cheese (Crumbled)
  • Cracked black pepper & sea salt

Directions

  1. Prepare the avocado by mashing, squeeze over the lemon juice, add the cracked black pepper and mix well.
  2. Toast the bread and spread over the avocado mix.
  3. Add the tomato’s, olives, halves of egg and crumbled feta and grind over salt and pepper to taste.
