- 6 Eggs
- 50g Chorizo (sliced)
- 4 handfuls spinach
- 1 onion (diced)
- 3 cloves garlic (finely diced)
- 40g feta
- 5g butter
- 10ml extra virgin olive oil
- Sat & Pepper

Directions
- Heat butter in a frying pan over medium heat, throw in the diced onion and chorizo and saute for 3-4 minutes
- Add the garlic, spinach and olive oil and cook until the spinach wilts
- Meanwhile, beat the eggs in a bowl and season well with salt and pepper
- Pre heat the grill on a high heat
- Pour the egg mixture evenly into the frying pan
- Cook for roughly 4-5 minutes
- Remove from the hob and place under the grill for a final 2-3 minutes or until the top is golden.
- Crumble over the feta to serve
