Thai Pan Fried Salmon with Greens
Ingredients (Serves 2)
- 2x 120g salmon fillets
- 2 cloves of garlic crushed or finely diced
- 2 red chillies (finely sliced)
- 30ml miring sauce
- 15ml honey
- Coconut milk 50ml
- Crème freche 1tbsp
- 1 lemon squeezed
- 20g salted peanuts
- Thumb sized wedge of ginger diced
- Butter (frying)
- 150g broccoli
- 150g green beans

Directions
- Heat a frying pan at medium temperature.
- Add the salmon fillets and cook for 2-3mins on each side.
- Add in the chillies and cook for a further minute or two.
- Add the garlic, miring sauce, coconut milk & honey, cook for a further minute.
- Finally add in the ginger and lemon juice and simmer for a final minute.
- Place salmon onto plates, add crème fraiche to pan and stir into the juices to make a thicker sauce.
- Pour sauce over salmon, dust over peanuts and serve with broccoli and green beans.
