Thai Pan Fried Salmon with Greens

Ingredients (Serves 2)

  • 2x 120g salmon fillets
  • 2 cloves of garlic crushed or finely diced
  • 2 red chillies (finely sliced)
  • 30ml miring sauce
  • 15ml honey
  • Coconut milk 50ml
  • Crème freche 1tbsp
  • 1 lemon squeezed
  • 20g salted peanuts
  • Thumb sized wedge of ginger diced
  • Butter (frying)
  • 150g broccoli
  • 150g green beans

Directions

  1. Heat a frying pan at medium temperature.
  2. Add the salmon fillets and cook for 2-3mins on each side.
  3. Add in the chillies and cook for a further minute or two.
  4. Add the garlic, miring sauce, coconut milk & honey, cook for a further minute.
  5. Finally add in the ginger and lemon juice and simmer for a final minute.
  6. Place salmon onto plates, add crème fraiche to pan and stir into the juices to make a thicker sauce.
  7. Pour sauce over salmon, dust over peanuts and serve with broccoli and green beans.
