Teryaki Salmon with Steamed Veg

Ingredients (Serves 2)

  • 240g salmon fillet
  • 2 thumbs Ginger (finely diced)
  • 1-2 cloves garlic (finely diced)
  • 1 red chilli (finely diced)
  • 3dsp coconut milk
  • 10g coconut oil
  • 3tsp honey
  • 10ml rice wine vinegar
  • 10ml mirin sauce or sesame oil
  • 10ml dark soy sauce
  • 1 onion
  • 2 cups broccoli
  • 200g green beans
  • ½ lemon

  • 10g coconut oil

  • 10ml rice wine vinegar
  • 10ml mirin sauce or sesame oil
  • 10ml dark soy sauce
  • 1 onion
  • 2 cups broccoli
  • 200g green beans
  • ½ lemon

Directions

  1. Heat coconut oil in a frying pan at medium heat and saute the onion for 3-4 minutes
  2. Mix the ginger, garlic, rice wine vinegar, soy sauce, honey and mirin sauce (or sesame oil) in a bowl and season with salt and pepper.
  3. Throw the salmon and chilli into the frying pan, cooking for 3-4 minutes on each side
  4. Set the green beans and broccoli to steam for 3-4 minutes
  5. Pour the marinade over the salmon and add the coconut milk, and cook for a further minute or two on each side
  6. Serve alongside the vegetables with a lemon wedge
