Cinnamon  & Blueberry Protein Pancakes

Ingredients (Serves 1)

  • 25g whey protein
  • 100ml milk
  • 1 large egg
  • 50g porridge oats
  • 1tsp cinnamon
  • ¼ tsp baking powder
  • 10g butter

Directions

  1. Add the oats to a blender and blitz until fine
  2. Add remaining ingredients except the butter and blitz again until you get a batter texture
  3. Heat a frying pan with the butter to a high heat (make sure pan is hot before adding in mixture)
  4. Pour the batter into the frying pan evenly spreading it around the pan
  5. Cook for approx. 60s on each side or until lightly golden
  6. Move onto a plate and cut the pancake into quarters, stack them up on top of each other
  7. Serve with blueberries and 100g Greek Yogurt or Skyr yogurt
